'Carrot' Hummus Appetizer

Ingredients:
~Hummus~
- 540g of cooked chickpeas (2 cans)
- 2-3 cloves of garlic
- 1/3 cup lemon juice
- 3/4 cup tahini
- 2 tbsp olive oil
- 1/3 cup water
- mini bell peppers
- either curly parsley or cilantro
Steps
Add all hummus ingredients to a food processor. Begin blending, slowly drizzling in water until the mixture reaches a smooth consistency. Continue blending for about 5 minutes, until light and fluffy.
Slice the mini bell peppers in half lengthwise and remove the seeds.
Assemble the “carrots” - Place a sprig of parsley or cilantro at the top of each pepper half (to resemble carrot greens), then fill the pepper cavity with hummus.
Arrange on a plate and enjoy!
